Steak and Kidney Pie

This Steak and Kidney Pie is perfect to make to celebrate the feast of Saint Thomas More.

Today is the feast day of Saint Thomas More. I remember him most notably from the series on cable called the Tudors.

Sir Thomas More was a father of four and married his childhood sweet heart Jane Colt. When Jane died at a young age he remarried Alice Middleton a wealthy widower to help him raise his very young children.

He graduated from Oxford with a law degree and wrote a book called “Utopia” which caught the attention of King Henry VIII.  Henry liked him so much he became his trusted adviser and Chancellor.

King Henry wanted a divorce from Catherine of Aragon to marry Anne Boelyn. Sir Thomas did not approve of this. He also did not want to pledge the Act of Succession and the Oath of Supremacy. In other words, Thomas would not acknowledge King Henry as the supreme head of the church. He knew that only the Pope is the head of the Church. 

Sir Thomas More would not compromise his moral values and for that he was imprisoned in the tower and beheaded on Tower Hill in London by King Henry VIII on July 6, 1535.

He was canonized a saint in 1935.

Steak and Kidney Pie

Ingredients:

2 pounds boneless beef chuck cut into 1 inch pieces
12 ounces veal kidneys cut into l inch pieces
2 tablespoons all purpose flour
2 tablespoons Montreal Steak Seasoning
2 tablespoons vegetable oil
1 large onions coarsely chopped
1 cup beef broth
1 tablespoon Worcestershire sauce
2 cups Bisquick mix
1 cup milk

Directions:

Preheat oven to 350 degrees.

Bat beef and kidney dry. In a large zip-lock bag add four and Montreal Seasoning. Add beef and kidney cubes and roll around in zip lock bag until the beefand kidneys are evenly coated.

Heat oil in a 12 inch cast iron skillet. In 2-3 batches brown meat until browned on all sides, about 5 minutes per batch.

Add onion and allow to cook until translucent about 5 minutes. Add water and scrape any browned bits that collected on the bottom of the skillet. Cook for an additional 5 minutes until onions are soft. Add beef and kidneys back to the skillet and add broth, Worcestershire, and bring to a simmer. Cover and transfer to the oven. Braise until beef is very tender about 1 hour. In a medium bowl combine Bisquick and milk, pour evenly over beef mixture. Bake uncovered an additional 30-40 minutes or until golden brown.

Serve hot.
