Spinach Soup Recipe

I have made this very simple and healthy spinach soup several times lately, so I thought I should share the recipe with you. It's also very cheap so it's a really good option when you need to save some dollars. Best thing, you know that spinach makes you strong like Popeye ; )

I always eat the soup together with a boiled egg which I cut in half and put in the soup. Spinach and egg just go perfect together. If you want to add some extra protein you can serve the soup with some bacon.

You'll need:

  1. 14-21 ounces/400-600 grams spinach (I use frozen, shopped spinach)
  2. 1 onion
  3. bouillon (from vegetables)
  4. Salt & Pepper
  5. Olive oil or butter
  6. Milk or Cream (optional)

Serve with egg and/or bacon

How to:

  1. Boil water (about 34 ounces/1 liter).
  2. Add bouillon, shopped onion and spinach to the boiling water.
  3. Add salt and pepper.
  4. Add some olive oil and milk or cream if you want it a bit thicker. I usually settle with just olive oil.
  5. Cook for about 10-15 minutes.
  6. Enjoy!
