Spicy Oven Roasted Nuts

I really kept on thinking for a long time before naming this post. I mean this recipe is a cross between our famous kadalai pakoda and the other famous roasted cashew nuts. The other day we had small get together in our home and I had prepared this oven roasted nuts and this cake for the occasion.I am happy to report that both were a great success.Everyone enjoyed them thoroughly.Now coming to this recipe,the moment I decided I was going to prepare these nuts I also decided I was not going to deep fry the.I was somehow pretty sure that they will turn out well when roasted in oven.This recipe is purely my guess work and I was so happy to attain that prefect golden crust here and there in the roasted nuts with negligible amount of oil.I made two batches with tow different sets of spicing.But spicing these nuts depends totally on you.Play around and perfect it :)
Spicy oven roasted nuts
Spicy oven roasted nuts recipe
Star ingredients:Cashew nuts and peanuts
Time:10 minutes+30 minutes
Yield:2 cups
Ingredients:
1 cup unsalted peanuts
1 cup cashew nuts broken into two
2 tablespoons gram flour
2 tablespoons cornflour
2 teaspoons ghee
1 teaspoon oil
Salt
Spicing set1 
1/2 teaspoon turmeric powder
1/2 teaspoon asafoetida
1 teaspoon chilli powder
Spicing set2
1/2 teaspoon chilli powder
1/2 teaspoon garam masala
1/2 turmeric powder
1/2 teaspoon kasuri methi crushed
Method
1.Mix all the ingredients except oil in a wide tray. Add the spicing of your choice and mix well. If using the second set of spicing kasuri methi has to be added after roasting.
Spicy oven roasted nuts2.Pre heat oven at 180C. Prepare a  baking sheet by greasing with little oil. Tranfer the prepared nuts mixture to the baking sheet as a single layer.
3.Add half teaspoon oil and mix well,roast in oven for 15 minutes.Remove from oven mix well add 1/2 more teaspoon of oil and roast for 15 more minutes.
Spicy oven roasted nuts4.Remove from oven,cool for 10 minutes,transfer to an airtight container.
Spicy oven roasted nutsNotes:
1.If using kasuri methi use after roasting as it tends to become very bitter otherwise.
2.You can even add chaat masala and amchur as spicing
3.For an entirely different flavor use chilli flakes,crushed garlic oregano etc.
4.If you want a thick crust increase flours by 1 more tablespoon and form a thick batter and then coat the nuts.
