soya chunks curry - an easy curry made with soya chunks,spice powders and coconut milk .I tried this one last week and it came out very well and am using coconut milk in the recipe for very first time and it came out fantastic with some sweetness from it.
Everytime i make masalas with coconut paste and did not tried with coconut milk.Really it is a different taste while trying with coconut milk in the recipe and also made coconut milk biryani which i forget to take snaps for the blog.Sure i will post that soon and that too tastes awesome.Amma did not make biryani with coconut milk as it did not lasts for long,it think only once she made that.This recipe is super easy to make and you can also replace it with coconut paste instead coconut milk too.Lets move on making.,

easy curry recipe with soya chunks and coconut milk
Ingredients
- soya chunks - 1 cup
- onion - 2 finely chopped
- tomato - 2 finely chopped
- ginger garlic paste - 1 teaspoon
- turmeric powder - 1/4 teaspoon
- red chilli powder - 1/2 teaspoon
- garam masala - 1/4 teaspoon
- coconut milk - 1/4 cup
- fennel seeds - 1 teaspoon
- curry leaves - as needed
- salt - to taste
- oil - as needed
- Soak the 1 cup of soya chunks in boiling water for 15 to 20 minutes.Then drain it and rinse it with water twice and squeeze the water completely.
- heat 1 tablespoon of oil in a kadai and add fennel seeds.Once it splutters add ginger garlic paste.saute it well.
- Add finely chopped onions to it and saute it till it becomes soft.Then add tomatoes and cook it till becomes mushy.
- Now add all spice powders - turmeric powder,red chilli powder and garam masala to it and cook the raw aroma leaves.Add 1/4 cup of water to it and cook it for 2 minutes.
- Now add enough salt to the recipe and mix it well.
- Add soya chunks to it and give a mix till it combined well with the masala.
- Now add 1/4 cup of coconut milk and cook it in low flame for about 5 minutes till the soya absorbs it.
- switch off the flame and and add curry leaves to it and give a mix.
- Serve piping hot with rotis and steamed rice.
