hope all doing good and am back with easy to make one pot meal/biryani with soya chunks and i tried this almost 3 to 4 times before making it for the blog.the recipe is so simple to make and i used basmati rice for making this biryani.

Usually we make biryani with seeraga samba/zeera rice which is very good and flavorful while making biryani.But want to give a try on basmati rice for making biryani and i almost experimenting different varieties in past three months and being a food blogger it was more interesting and excited to search and make your recipes.I started using basmati rice after coming here to Pune,but was not satisfied with the results.so stopped using it for making biryanis and also making quite often.

After shifting to new home,got some friends and they suggested me to give a try once again.Being a food blogger,i too got some enthu in me and start cooking with basmati and also V helped me on this.Bought two varieties normal and extra long and both came out very well.My first try was egg biryani which came out super perfect and V appreciated me for making that spicy biryani.Unable to take snaps for blog,but sure i will post it soon here.On his birthday,i made this biryani along with raita and some curry to go with.That was amazingly yummy and my cooking on basmati now improved and some friend's blogs helped me a lot.

You have to rinse the basmati rice and then soak it in water for about 15 to 20 minutes and then measure it according to your rice measurement and then cook it.I mostly soak it for 20 minutes and then add it to the pressure cooker.And also some of my friends told me to add more oil for making rice more fluffy and without sticking to each other.But i added less oil and made it same way ,it came out really well without sticking to each other.I always prefer the rice to be perfectly cooked rather than cooking it 75%,so increase my water to 1/4th.

soak your soya chunks in warm water and then rinse in cold water twice.Squeeze excess water from them and keep it ready for making the biryani.The pictures were taken while i tried this second time and i paired it with some peas masala and raita to go with and both tastes so amazing.lets move on making.,

biryani made with soya chunks and spices

Ingredients

  • basmati rice /normal rice - 1 cup
  • soya chunks - 1/4 cup ,soaked and rinsed
  • onion - 2 finely sliced
  • tomato - 2 finely chopped
  • green chilli - 2 slit
  • coriander and mint leaves - as needed
  • ginger garlic paste - 1 1/2 teaspoon
  • red chilli powder -1/4 teaspoon
  • coriander powder -1/4 teaspoon
  • garam masala - 1/2 teaspoon
  • yogurt -1 tablespoon
  • bay leaf,cinnamon,black cardamom,green cardamom,star anise,cloves,cumin seeds - for tempering
  • oil - 2 tablespoons
  • ghee - 2 teaspoons
  • salt - to taste
Instructions
  1. Wash the measured 1 cup basmati rice in water thrice and then soak it in 2 cups of water for 15 minutes.
  2. Take a pressure cooker and add oil in it,once it get hot,add 1/2 stick cinnamon,2 bay leaves,1 black cardamom,3 green cardamom,4 cloves,1/4 star anise,1 teaspoon cumin seeds.Saute it gently in medium flame without burning them.
  3. Add onions and saute it well it soften and then add ginger garlic paste and then saute it till raw smell leaves.
  4. Add green chilli and tomatoes ,saute it well till the tomatoes turn soft and mushy.
  5. Add red chilli powder,coriander powder and garam masala to it and then saute it well.now add the soya chunks which was already soaked and rinsed in water(squeeze out extra water from them and then add it).
  6. Mix t well and sprinkle little water to bring everything together.Once it came out well,add coriander leaves and mint leaves and give a good mix.
  7. Now drain the rice and then add it to the pressure cooker.Add 1 1/2 cups of water to it and add enough salt.give a gentle mix without breaking the rice.
  8. Cover it with the lid and cook upto 3 whistles in medium flame.Switch off flame and wait till pressure releases.
  9. After few minutes,open the lid and fluff the rice gently with the spatula and drizzle ghee over it and serve.
