This weeknight standby is filled with salty ham and nutty Swiss cheese, Made in the slow cooker it is elegant as it is easy.
I think this is my daughters favorite dish. Who doesn’t love cheese and ham in the middle of a juicy piece of chicken? It is ooey gooey delicious. I just made it easier by making it in the slow cooker. I used chicken thighs because the middle folds over like a envelope. Perfect for stuffing them with ham and Swiss. I then placed them seam side down. Add some cream soup and for a bit of crunch some pulverized stuffing mix. It was a hit and it freezes perfectly too! I suppose you could use chicken breasts if you like, a bit more time consuming to roll them with the ham and Swiss, but it can be done.

Ingredients:
1 (10.75 ounce) condensed cream of chicken soup
1 cup milk
8 boneless skinless chicken thighs
8 slices of ham
8 slices swiss cheese
1 (8 oz) pkg herbed stuffing mix
1/4 cup butter melted
Directions:
In a small bowl combine soup and milk. Put enough mixture in the slow cooker to coat the bottom. Unfold each chicken thigh and place a piece of ham and cheese inside. Fold chicken back and place fold side down in slow cooker. Pour remaining soup over the top of the chicken. Using a rolling pin bash the herb mixture until pulverized. Sprinkle the stuffing on top and drizzle butter over stuffing.
Cover and cook on low 4-5 hours. You can remove the insert and place under the broiler to brown the top if desired.
