Shahi thukada/thukaraShahi thukara aka thukade is a very famous milk based dessert made with white bread,a gem among Nawabi cuisine Hyderabad,Andhra pradesh.Although I have never tasted this from any authentic place,I have heard a lot about this and have loads of recipe for this in my collection.I have been wanting to try this for a long time and finally got my hands on it few days back.For those who are wondering,ghee fried bread pieces,topped with rabdi and garnished with nuts makes this indulgent dessert.I saw few recipes where we need to prepare a sugar syrup and dip the bread slices,but this method is very quick and tastes delicious. The traditional method of making shahi thukada calls for reducing whole milk for quite sometime to make the rabadi.Here in this recipe condensed milk is added to the boiling whole milk,though not authentic,a very decadent no fail method.Once the rabadi is ready,this dessert can put together in a jiffy. You can make this rabadi one day ahead and chill it and assemble the dessert 2 hours before serving.I ate the whole serving after photo shoot,blissful indulgence indeed :)

Star ingredients:White bread and whole milk
Time:40 minutes
Serves:3
Shahi thukada/thukara
Ingredients:
3 white bread slices
250 ml whole milk
1/4 cup sweetened condensed milk
1/8 cup sugar
Finely chopped almonds for garnishing
Ghee for deep frying
Rose essence
Method:
1.Heat milk in a wide vessel and bring to a boil.Add condensed milk,sugar and mix well.Stir occasionally and cook till milk reduces a bot,The consistency should be like thick stew,free flowing.A bit thinner than condensed milk.This is called rabdi/rabri.You can make this a day ahead and refrigerate.Else chill in until you fry the bread slices.
Shahi thukada/thukara2.Cut the bread slices into two/four pieces.Heat ghee for deep frying and fry the bread slices until golden brown from both sides on low flame. Set aside the bread
Shahi thukada/thukara3.Arrange the fried bread slices on a plate and pour rabri generously over it.Garnish with topped nuts.
Shahi thukada/thukara4.Chill for 1-2 hours before serving.
Shahi thukada/thukaraNotes:
1.You can deep fry in oil instead of ghee but you sure are compromising with flavor.
2.If you are calorie conscious you can apply little ghee on bread slice and toast it instead of deep frying.
3.You can add saffron while the milk is boiling.
