Shahi Paneer

Shahi paneer is yet another delectable gravy from north India with paneer.Most of the paneer recipes are new to me expect that I have seen them in menu cards :P.When ever we visit restaurants I invariably order paneer butter masala or kadai paneer.Only after marriage,when I started cooking I started making different recipes with paneer,not because I was bored of eating paneer butter masala but really bored of cooking same thing over and over :). Few years back when I saw this recipe in a TV show,I noted down the recipe,but over the years I have made a lot of change to the original one.The original recipe was very mildly flavored and less spicy because of cashew paste.But these days I make it more spicy and hot,I avoid cashew paste and add more chillies
.Try this,for such a simple recipe,it is very tasty and rich too.

Shahi paneer recipe:
Star ingredients:Paneer
Time:30 minutes
Serves:3
Shahi paneer
Ingredients:
1 cup cubed paneer pieces
2 onions sliced thin
2 tomatoes chopped very fine
1/4 cup bell pepper cubes(optional)
3 green chillies
1/4" crushed ginger
1 teaspoon cumin seeds
1 teaspoon garam masala
1 teaspoon coriander powder
1/2 cup milk
Kasuri methi(optional)
Salt
Oil
Method:
1.Heat a kadai and add oil,once hot add cumin,ginger and green chillies.
Shahi paneer2.Next add sliced onions and fry till translucent.Add tomatoes,bell pepper and saute well till mushy.
3.Add garam masala,coriander powder,salt and mix well.Saute for 5 minutes.
Shahi paneer4.Add milk and mix well.Cook on medium flame for 10-12 minutes.
5.Now add the paneer cubes and cook till the gravy thickens and comes together.
Shahi paneer6.Top with kasuri methi and serve hot.

1.If the gravy is too watery,mix 1/4 teaspoon cornflour with milk and add to the gravy.
2.If you prefer more rich and mildly spiced dish,soak 10 cashews in milk and grind to a paste.Add the cashew paste along with milk and cook
