Seven Day Spicy Pickles

020It is that time of summer when you have that over abundance of all the vegetables. I didn’t think this time of summer would actually come. It is now here in its full-grown glory and I am enjoying it immensely.

One of the things I love about this time of year is the abundance of  Fresh vegetables. Mostly in particular is the cucumbers. It doesn’t matter where I get them either from my garden, or from a friends garden, there is always an abundance of cucumbers. I could make pickles all day long if I could. I love any kind of pickles and if they are easy to make like these refrigerator pickles then I am all over it!

This recipe is spicy, garlicky and full of heat. You also don’t have to can them, just let them sit in the refrigerator and do their thing.

This would be absolutely fabulous on a burger. I also like to chop these up fine and add them to my deviled eggs. It gives them an added kick.

Seven Day Spicy Pickles

Ingredients:

2 large cucumber

1 whole Scotch Bonnet or Jalapeno Pepper sliced

3/4 cup white vinegar

1 tablespoon pickling spices

2 cloves garlic roughly chopped

water

Directions:

Slice your cucumber into spears or rounds. Pack the cucumbers and peppers in the jar add the vinegar, spices and garlic. Top with water until the liquid reaches the top of the jar.

Close the jar and gently shake to get all ingredients distributed.

Refrigerate for seven days.
