Savory Bread Roll

Blog hopping is my favorite hobby,that I forget the time and get myself drowned to it :). I read some recipes,drool over seeing some pictures and bookmark a lot.But only few recipes see the day of light,I put the blame on lack of time and non availability of certain ingredients to defend myself :). Still there are few recipes which simply don't get out of your mind unless you try,right.This recipe from Dasanna's blog was one such thing,I had to make this at any cost at the moment I read it.But only thing was the filling she had used is a sweet preserve.I wanted to make a savory one as I planned it for our dinner.So I took the dough and basic concept from Dassana and made a quick savory filling of tomato and onions.The bread was out of world and my husband was asking many times,did you really make from scratch :P.The credit goes to Dassana for taking(a part) of my jitters away towards baking a bread,thank you!. Here goes the recipe..

Savory bread rolls recipe
Star ingredient:whole wheat flour+onion tomato filling
Preparation and time for making filling:30 minutes
Resting time:1 1/2 hr
Baking time:25 minutes
Dough
Ingredients:
1 1/2 cup whole wheat flour
1/2 cup all purpose flour
3/4 teaspoon active dry yeast
2 tablespoon oil
1 teaspoon sugar
1/4 cup luke warm water
Salt
1/2 teaspoon dried basil
Method:
1.Mix the sugar with luke warm water and let it dissolve.Sprinkle the yeast over it and let it proof for 10 minutes.The yeast should turn frothy after 10-15 minutes.
2.Mix all the other ingredients and rub with your fingers.Once the mixture is crumbly,add the yeast water and mix well.Slowly add about 1/2 cup water and form a dough.
3.Now start kneading the dough at least for7 minutes till it is very soft and smooth.Let it rest for 1 1/2 hours(depends on the yeast,climate) or ideally until it doubles in volume.

I made a very basic and simple filling here.As I added dried basil to the dough,I thought tomatoes will complement the flavor,and I did not any Indian spices to the filling,just to keep the flavors simple.
Method:
Saute 1 teaspoon cumin seeds,a piece of ginger and 2 green chillies.Add 1 thinly sliced onions and saute till translucent.Now add 3-4 finely chopped tomatoes,salt,1/2 teaspoon sugar and mix well.Mash it well with a potato masher.Cover and cook till the gravy thickens to a spreadable consistency.Allow to cool completely.

1.Take the leavened dough and punch it well.Roll it into a circle of 1/4" thickness.

Savory bread roll4.Place the roll in a loaf pan and let it rest again for another 30 minutes.
Savory bread roll5.Preheat the oven at 180C and bake for  25-30 minutes.
6.Cool on a wire rack for 15 minutes before slicing.

1.Try to use good quality yeast,if the yeast doesn't froth,discard it and try again.Make sure the water is not too hot.
2.I guess some aged pickle masala will work best and not turn the bread soggy in the middle.
3.Baking temperature may differ slightly,so insert a clean tooth pick or small fork to check if the bread is done.
