Roasted vegetable sauce{For pizza/pasta/dip}I always prefer fresh condiments homemade with quality ingredients to the store bought sauce/jam etc.Even when I make pizza/pasta I always try to use fresh homemade sauce.So every time I make them I try to change the recipe or tweak a recipe here and there to get a different taste.This slow roasted vegetable sauce is an excellent base for any pizza/pasta dish or just use it is a dip with your bread/spread for toast.Which ever way it is used,sure it creates a magic and take the dish to one level up.Try it out and lemme know.
Roasted vegetable sauce recipe
Star ingredients:Assorted veggies and mixed herbs
Time:50 minutes(In oven)
Serves:3
Roasted vegetable sauce{For pizza/pasta/dip}
Ingredients:
3 tomatoes chopped fine
1 onion sliced
1/4 cup cor kernels
1/2 cup different colored bell peppers
2 carrots chopped
1 piece pumpkin
1 cucumber
2 tablespoons oil
1/2 teaspoon sugar
Salt
Mixed herbs
Method:
1.Preheat oven at 180C.Grease a large baking dish and add all the chopped veggies to it.Add oil,salt and herbs.Mix well till coated.
2.Keep in the oven for 40-50 minutes till the veggies shrink well and leave out juice.
Roasted vegetable sauce{For pizza/pasta/dip}3.Now once cooled,puree the veggies along with juice to required consistency.

Notes:
1.You can add veggies like celery,zucchini etc.
2.Try adding salt and pepper instead of mixed herbs for a different taste
3.You can also add mint leaves
