Roasted Beets and Micro Green Salad

I've been trying out micro greens lately. Finally managing to grow mustard ,fenugreek and wheat seedlings in my balcony with minimal amount of effort.
I'm kinda used to huge back yards , lots of sunshine and fresh produce. Totally impossible in high rise building. So the fresh green seemed to be from a distant past until some soaked fenugreek seeds sprouted in my kitchen window sill.
And then we tried out the microgreens.
A burst of freshness, a wee bit of bitterness andsome sweetness and a whole lot of health in each bite.
Ive roasted beets before to soften the tough bite out of them.

What roasting also does is sort of caramelized them . So you have this earthy sweetness to them.
And maple syrup.
Too much of good stuff going on in this plate.

These are micro greens. Basically, mustard -desi rye Dana, fenugreek-methi Dana and wheat berries- gehun that were soaked overnight and sprinkled on  soil in a pot placed where it can receive a little sunshine.Four days later, the wheat grass was made into a smoothie and the fenugreek micro greens into a pretty salad.
Roasted Beets and Micro Green SaladI roasted the beetroot for 15 minutes after peeling it. I allowed it to rest and then with a super sharp knife cut into matchsticks.The beetroot was not totally cooked, allowing me to slice easily.And hold shape.My hands were a bloody red though.We're facing a water shortage here.Problems.Almost like Macbeth asking if all the water from the oceans will clean his hands...Managed to get it off without the melodrama.Washed the micro greens thoroughly .Roasted sesame seeds.Sliced the cottage cheese.
Roasted Beets and Micro Green SaladMy dressing was interesting.Lemon juice, Pure Maple syrup, canola oil, salt pepper and mustard powder.Shaken ,not stirred and poured over the cut veggies.Tossed and served with green tea for a perfect after workout snack.Protein from cottage cheese. Vitamins -Vit C and essential minerals and fiber from the micro greens and beetroot, sesame seeds provide the calcium and other vital nutrients and the lemon juice and fat to help the body absorb all the nutrients.
Roasted Beets and Micro Green SaladThese are my micro greens. Wheat was the fastest, followed by fenugreek. Mustard seeds are a little slow on the uptake.
