Roasted Baby Potatoes

I love baby potatoes.That is a clean cut sentence which means I invariably buy them when ever I come across.Every time I make some grand plans in my mind to cook something new and innovative using baby potatoes but end up making normal spicy roast :). But when I bought them recently I was determined to try something new and searching for recipe.I found this recipe from Rak's kitchen very interesting as well as simple.I tried it out with some changes and I tasted so well.It was very very crispy and well cooked in spite of using very little oil.Also I was able to continue with my other tasks while these were getting done in the oven.Here is how I made them on the lines of Rak's recipe.I did not use cheese as mentioned in the recipe and omitted garlic too.This made a very nice combination with simple jeera rice and rotis.

Star ingredients:baby potatoes and kasuri methi
Time:10+20 minutes
Serves:3
Ingredients:
20 baby potatoes halved
2 tablespoon all purpose flour
1/2 teaspoon chilli powder
1/2 teaspoon turmeric powder
2 teaspoons kasuri methi
Salt
3 teaspoons oil
Method:
1.Par boil baby potatoes in salted water for 5-7 minutes.Drain and pat dry.
2.In a bowl combine all the ingredients except oil and mix well.
Roasted baby potatoes3.Add the baby potatoes and pour 2 teaspoons oil over them.Mix well so that all the potato pieces are coated well with flour mixture.
Roasted baby potatoes4.Preheat oven at 200C.In a baking tray arrange the potato slices and pour the remaining flour+oil mixture over the slices.
Roasted baby potatoes5.Add one more teaspoon of oil and bake for 20-25 minutes turning once or twice in between.

1.You can sprinkle some chaat masala and lime juice to serve this as a snack
2.Along with potatoes some thick rounds of onions can also be added.
