Roast Chicken for #InaFriday

Well it is the first Friday and that means that it is time for #Inafriday. This month it is all about the Main Course.

Today I made a roast chicken. In almost all of the Barefoot episodes Ina made a roast chicken for Jeffrey every Friday. Well almost every Friday.

He loved his roast chicken and why not? It is pretty simple to make, economical and everyone loves it.

Roast Chicken

Ingredients:

1 (6 lb) roasting chicken

1/2 tablespoon kosher salt

1/2 teaspoon black pepper

3 sprigs fresh thyme

1 lemon cut into wedges

1 head of garlic cut in half lengthwise

1/4 stick butter

1 large onion

Directions:

Preheat oven to 400 degrees

Remove giblet from chicken and rinse the inside and outside of the bird.

Pat the outside with a paper towel to dry. Salt and pepper the inside of the bird and then stuff with the thyme, lemon and garlic. Rub the butter on the outside of the bird and sprinkle with salt and pepper.

Tie the legs together with kitchen twine and tuck the wings under the bird. Place the onions on the bottom of the roasting pan and sit the chicken on top.

Roast the chicken for 1 1/2 hours or until the juices run clear. Allow to rest 20 minutes before carving.
