Ricotta Chocolate Cupcake | Cashew Ricotta CupCake | Chocolate Cheese Cupcake|  Cupcake Recipes 
This time i paired with Rafeeda ,a sweet friend from The Big Sweet Tooth and she gave a super yummy ingredients as cashews and cheese.The recipe came out really perfect and i tried the cupcake with a cheese for the first time and happy with the outcome.Thanks Rafee for the wonderful ingredients and here comes the recipe. Untitled I used ricotta cheese which i made in home with leftover milk and this is the first cheese i made in home.will post that soon and the recipe goes to Secretly Cooking Challenge by Priya Suresh.Usual semi sweet cocoa powder and i replaced butter and eggs with ricotta cheese which makes 4 cupcakes here. Untitled  Ingredients for making
  1. All purpose flour -1 cup
  2. Ricotta cheese- 1/2 cup
  3. Sugar -1/4 cup
  4. Cocoa powder -2 teaspoons
  5. Baking powder -1/4 teaspoons
  6. salt - a pinch
  7. Cashews -1/4 cup finely chopped
  8. vanilla essence -1 drop
  9. Nuts and raisins
  
     How to make
  • Take ricotta cheese and sugar in a large mixing bowl and using a balloon whisk or any other whisk ,beat it until it combines well.
  • Add vanilla essence and again whisk well.
  • In another bowl,sieve flour,cocoa powder and salt along with baking powder.Mix chopped cashews to it.
  • Add the mixture little by little to the cheese mixture and make a dropping consistency batter,Add few teaspoon of milk if required.
  • Take the cupcake liners out and fill half of the mixture.Top with desired nuts and raisins.I used chopped almonds here.
  • Preheat the oven to 200 degree Celsius and bake the cupcakes for 20 minutes.
  • After 20 minutes,remove from oven and cool all the cupcakes in a wire rack.
  • Serve as it is or with desired frosting.
  
  
     Cooking tips#1Use store bought ricotta too.#2Use milk as half of the cheese if you do not want the cupcakes cheesy.#3Coating cashews is more important as it does not sink in the bottom.
