Healthy & fat burning salad

Happy New Year to all! I hope you had a happy holiday with your family and friends, with great events and celebrations in which abounds always sweet and good food, accumulating those extra calories. That’s why my first post of the year I will dedicate to healthy food, which must always be accompanied by exercise.

In our daily diet, one of the foods that can help us is the artichoke, vegetable with few calories (30-40) and very important in the diets, as it facilitates lymphatic drainage and cleansing the body, which enables us to fight against cellulite.

Moreover, it also contains: Vitamin A and B6, calcium, phosphorus, iron, …, that will help us fight cholesterol and reconstitute after these copious vacation. So I will share with you a tasty salad of artichokes, Blancas de Tudela, a variety very popular in Spain.

Ingredients for the salad:

1 or 2 vegetables for salad in season, which you like most. In our case we have chosen different varieties of lettuce and arugula.

1 boiled egg for grating

4 artichoke hearts “Blancas de Tudela” halved.

Vinaigrette and Salad

Ingredients for the vinaigrette:

1 chopped onion, extra virgin olive oil, vinegar and salt.

Development of the vinaigrette: a tablespoon of vinegar to 3 of oil, first mix the chopped onion, salt, vinegar and then add the oil, stirring everything well. And it’s ready to incorporate it into our tasty and low-calorie salad.
