Ranch Baked Chicken

These breaded chicken thighs are brown and crunchy on the outside, yet juicy and tender in the middle.

I was going to make the usual ranch chicken using the ranch dressing. When I went to the cabinet to get it, it was all gone. Someone used it all up. So I went through my cabinets to see what I could to replace it. I looked at the ingredients on the ranch package so I have an idea of what goes into it. Dont get me wrong, I dont have the exact measurements of the secret recipe, but this time I decided to wing it.

My niece Nicki makes something similar to this, but she uses the ranch dressing and boneless skinless chicken breasts. I used the recipe once to make chicken tenders.

I love this because the chicken is baked and not fried. Not to mention that the Panko makes them extra crispy like they are fried.

Ranch Baked Chicken

Ingredients:

1/2 cup mayonnaise
2 teaspoons onion powder
1 teaspoon salt
1 teaspoon garlic powder
2 tablespoons dried parsley
1 tablespoon white vinegar
1 cup panko bread crumbs
6 chicken thighs

Directions:

Preheat oven to 350 degrees. In a small bowl combine mayo, onion powder salt and garlic powder. then add parsley and vinegar set a side. Put panko bread crumbs in a shallow dish. Transfer mayonnaise mixture to shallow dish. Dredge chicken into ranch mixture then bread crumbs. Transfer to a 9x13 inch pan. Bake for 30-45 minutes or until golden brown.
