With Curry Patta.Like crackers ,only with a little less fat.Butter ,desi ghee either which ways will do. These savoury biscuits are so forgiving,I'm sure they'll do well with shortening too.                                                             We've made crackers here and here and here and here and here before. So this one with Ragi was a change in the composition and taste and health. Whole grains are the best this here.             Ragi and whole wheat. #WholeGrains here. Ragi or Nachni flour won't lend that crispness.
Rice flour can, but then the biscuits will crumble. So they can't be wafer thin. So they can't be crisp. You need the gluten for that. And then the curry Patta. Sometimes basil or parsley or oregano or thyme don't cut the cookie.You need a sharp flavor.To sharpen that further, green chillies.And sesame seeds to make this healthier.Oh, and that red sauce is my new batch of Harissa Sauce.Ragi and Whole Wheat Savory Biscuits with Curry Patta and Sesame SeedsAll coming up.I toasted my sesame seeds lightly first. You need
1 cup Ragi or Nachni or fox tail millet flour 1/2 cup whole wheat flour or atta1/2 cup plus 1 tbsp desi ghee or 140 GMs butter3 tbsp yogurt1 tbsp sugar1 tsp salt if using Amul butter (a little extra if using ghee)1/2 tsp baking powder 2-3 tbsp lightly toasted sesame seeds 3-4 green chilli 3-4 stalks curry Patta -Basil /oregano if you can't get curry Patta)Milk to knead
Preheat oven to 190C and line two cookie sheets with parchment paper. Cleaning is so easy after that.I'm using sea salt in these biscuits . The curry Patta is fresh from my garden err pots. Chop the curry Patta and green chilli fine.Lightly roast the Ragi flour over low heat.Whisk the yogurt,salt,sugar ,chopped greens together.Ragi and Whole Wheat Savory Biscuits with Curry Patta and Sesame Seeds
Mix the Ragi,wheat flour atta and baking powder.
