Queso Dip

The perfect game day dip for cheese lovers. Serve warm with your favorite crackers, chips, or veggies.

Queso Dip

Ingredients:

3 tablespoons unsalted butter
1/2 cup diced onion
1 jalapeno pepper seeds and stem removed
2 cloves of garlic minced
2 tablespoons all purpose flour
1 cup milk
1/2 cup chopped cilantro
1 can rotel tomatoes with green chili.
12 ounces grated smoked gouda

Directions:

Melt the butter in a medium saucepan over medium heat. Add the onions and cook for about 5 minutes. Whisk the flour into the pan and cook for another 30 seconds or so. Slowly pour the milk and stir with a whisk until the sauce thickens. Stir in the cilantro and rotel.
Reduce the heat to low and add the cheese. stirring until is is completely melted.
Serve immediately with tortilla chips, crackers or cut up veggies.
