Quesadilla

Wondering what this famous Mexican dish has got to do in my space?well this dish was the outcome of one among many experimental sessions in my kitchen.First for any one who might not know quesadilla(ke sa de ya) ,famous Mexican dish made of tortilla (a flat bread made of corn flour) and a sharp cheese(jack cheese) with/without some vegetables.I have tasted this dish long ago,though I liked the cheese filling,corn tortilla was not my cup of tea so I just let that go and did not bother to order or have them.Few days back while I was browsing,I happened to read this wiki article and came to know even wheat based tortillas can be made.I was hooked up as wheat based tortilla is something I can make at home afresh.You all know anything with flour and cheese has to taste good,so did my quesadilla :). I referred few recipes and all of them called for a mix of all purpose and wheat flour,but I just made the dough with wheat flour.Once the dough is ready,it is all up to you to chose the filing.It is fun I say.Right from tomatoes,bell pepper,sweet corn you can add any vegetable you like in this.When it comes to cheese try looking for jack cheese or sharp cheddar.If not available you can use mozzarella too.Making this is really easy,more easy than it is seen.try it once it is totally worth trying.This is not the authentic corn/flour based quesadilla recipe.The below recipe uses whole wheat flour and vegetables we like.

Star ingredients:whole wheat flour,assorted veggies and cheese
Time:20 minutes

Ingredients:
For wheat tortilla
1 cup whole wheat flour
2 tablespoons oil
Salt
For filling:
1 cup assorted veggies chopped(I used carrot,different colored bell peppers,corn kernels.cabbage,onion)
1/2 cup grated cheese(jack cheese/cheddar)
Chilli flakes
Salt
2 teaspoons oil
Method:
Tortilla
1.Take all the ingredients mentioned and knead to a smooth dough.Let it rest for 20 minutes.
2.Now divide the dough into 6 equal portions and roll like roti.Make them as thin as possible.
3.Heat a cast iron tava,spread little oil and place one rolled tortilla.Heat for just 10-15 seconds and flip.Heat the other side for 10-15 seconds.Repeat the same with all the tortillas and stack them till we get the filling ready.
QuesadillaFilling:
1.Heat a frying pan,add 2 teaspoons oil.Once the oil is hot add the onions first and fry for 1 minutes.Now add all the vegetables and saute for 2-3 minutes.
2.Add salt,chilli flakes and mix well.

1.Take one cooked tortilla on a clean surface and add grated cheese.Spread the cooked vegetables as seen in picture.Close from the other side.
Quesadilla2.Cook on medium flame from both sides till golden brown and edges are crispy.
Quesadilla3.Cut into wedges and serve hot.

Notes:
1.You can use a mix of wheat/maida for tortillas
2.Serve with any kind of salsa if possible
3.Increase/decrease the quantity of cheese as you like
