pyaz ki kachori or onion kachori- stuffed bread deep fried in oil or ghee served as a snack with chutneys.

onion kachori is my favorite and i tried once last year and having that experience i tried this with all purpose flour and i posted a version with whole wheat flour or atta along with atta sheera a combined post,you can check it here.This is the simple easy to make recipe and you can also use the same stuffing for making onion paratha too.This is served as it is or with green chutneys or tomato ketchup.i prepared the kachori recipe with the guidance from my previous recipe,you can alter your own and enjoy garam garam kachoris.

kachoris are originated from Rajasthani cuisine and now it is available in all sweet and snack shops in India and this is a snack item made with variety of stuffing and the outer dough is made with either all purpose flour or whole wheat flour.You can make this in minutes and i want to share some more kachoris which i prepared in last few months here.so stay tuned for more snack recipes.I already shared green peas kachori,a bengali delicacy,check that too.I prepared this snack 2 days back and it came out super good and here the monsoon is slowly warm and am waiting for summer.Dont know why i like summer:)lets move onto the recipe,

a snack recipe made using onion and bread dough


Ingredients

  • all purpose flour - 1 cup
  • onion - 3 nos finely chopped
  • ginger - finely chopped - 1 teaspoon
  • red chilli powder - 1/4 teaspoon
  • turmeric powder - 1/4 teaspoon
  • coriander powder - 1/2 teaspoon
  • chat masala - 1/4 teaspoon
  • cumin seeds - 1 teaspoon
  • poha - 1 teaspoon
  • salt - to taste
  • coriander leaves - finely chopped 3 teaspoons
  • oil - for frying
  • water - as needed
Instructions
  1. Make the dough with all purpose flour/maida with a teaspoon of oil , enough salt and water.rest the dough for 30 minutes before proceeding.
  2. Meanwhile prepare the stuffing,for that heat 2 teaspoon of oil in kadai and add cumin seeds.
  3. Once it splutter add ginger followed by onions.saute it till it becomes soft.
  4. Now add turmeric powder,red chilli powder,coriander powder and chat masala and enough salt to it.
  5. Saute it and sprinkle little water(do not add more water otherwise the stuffing becomes soggy).
  6. Add poha to it and mix it well(i added poha to absorb excess water here.in old post which i mentioned in introduction,i added roasted gram powder).Mix it well.
  7. Add coriander leaves and give a quick mix.Switch off the flame and cool the mixture.
  8. Now take the dough out and divide into equal small balls.Prepare the rolling surface and roll each ball into a thin disc.Place a spoonful of filling in the center.
  9. Fold it like we fold for momos. Press it gently and roll it again gently to given even level.
  10. Heat the oil for deep frying in a wok and wait till it reaches hot temperature.
  11. Once the oil get hot,lower the flame and deep fry the discs like we make poori.
  12. Drain the excess oil absorbent paper.Serve it with sweet or sour chutneys.
