Pumpkin Strudel Muffins

These deliciously moist pumpkin muffins are made with canned pumpkin and topped with a yummy streusel. They are perfect for #Pumpkinweek.

Pumpkin Strudel Muffins

Ingredients:

1 3/4 cups all purpose flour
1 cup sugar
1/2 cup dark brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
2 eggs
1 15 ounce can of pumpkin puree
1/2 cup vegetable oil
For topping
1/4 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1 tablespoon butter

Directions:

Preheat oven to 350. Place liners in a standard muffin tin. In a medium bowl combine flour sugar soda salt and spices. In another bowl combine the wet ingredients such as eggs, puree and oil. Pour the wet ingredients into the dry ingredients and mix until just moistened. Insert batter into each well until nearly full. Fore the topping, combine sugar flour and cinnamon cut in the butter. Combine until crumbly. Add about a tablespoon to each muffing. Bake in the oven 30-40 minutes or until muffins are done.
