How many of you like pumpkin aka white pumpkin.I just love that vegetable,not only for its taste,also for its health benefits and most important is its versatility.You can use this vegetable in so many recipe right from drinks to desserts.Its high water content is a bliss for those who are in diet for weight reduction.Mor kuzhambu with pumpkin is a signature of Tambram cuisine.Also pumpkin is widely used in making kootu,paruppu kuzhambu etc.Today I am sharing a very very tasty raita made with pumpkin.This is a very simple dish that can be prepared in 10 minutes yet very flavorful and healthy too.It satisfies your appetite with out increasing calories.Tastes great with any flavored rice/rotis etc.
Pumpkin raita recipe
Star ingredients:White pumpkin&curd
Time:10 minutes
Serves:3
Ingredients:
1/2 cup cubed pumpkin
1/2 cup thick curd
2-3 green chillies
1/4 inch ginger
1/2 teaspoon mustard
5-6 curry leaves
salt
1 teaspoon oil
Method:
1.Boil the cubed pumpkin until soft(I boiled for 5 minutes keeping the vessel closed)
Pumpkin raita2.Grind the boiled pumpkin coarsely along with green chillies
Pumpkin raita3.Whisk the curd until smooth,add ground pumpkin and salt.
4.Do a tempering of mustard and curry leaves in 1 teaspoon oil.Add to the raita,mix well and serve.
Pumpkin raitaNotes:
1.You can add 1 teaspoon grated coconut while grinding.
2.Serve chilled if needed.
