Yesterday, National Can-It-Forward Day, was a great success! I gave away over 1,000 of my Nano-Canning: Specialty Jams, Jellies, and Marmalade eBooks AND as an added bonus, I got a 5-Star review of said book from a top 500 reviewer on Amazon who is also a member of the Voice Vines ! The giveaway plus the positive review drove that little eBook from # 246 to #39. I sure would appreciate it if any of you who got the eBook would put a review on, it sure would help me out. If you can get your eBook to #12 (the first nano-canning book is currently #16) it gets on the first page which gives it better discoverability. So many bloggers shared my post about the giveaway I want to thank all of you who did it certainly helped get the eBook out there!

This morning, I was telling Mr. Picky-eater how bloggers and Facebook Buddies shared my post, how that helped me give away so many eBooks and finally I mentioned that Brandie, at www.thecountrycook.net had posted on her FB page where it made a HUGE difference in the number of people able to see it because she has so many followers. My husband’s response? “Brandie? That Country Cook woman? Yeah, she’s the one who you got that pulled pork recipe from, right? Why don’t you make that for dinner tonight?” Sooooooooooo………I was feeling pretty darn successful and all the hubs got out of it was Sunday night dinner. He keeps me grounded and I love him. Hey, he bought me a new purse this weekend so I’m okay with it.

He is actually the reason that this pulled pork is so good! I usually get a different brand of meat rub at the store but this time, I used one that he got at an Oklahoma Grocer’s Association conference he had a booth at last week. My husband is not a grocer; he works in finance and has something to do with how grocer’s get paid through a certain electronic payment system. While there, he was offered a free sample of Head Country Bar-B-Que sauce and Championship Seasoning rub. I’m not a big sauce person but I DO love me some rub, and this stuff rocked. Mr. Picky-eater likes both. You can find Head Country here: www.Headcountry.com So, here’s the pork recipe………….

It only takes the following ingredients:
Pork – roast, butt, tenderloin (tenderloin is what I had)
Meat dry rub – I used Head Country Championship Seasoning
12 oz. can of Coke, Dr. Pepper, Pepsi or whatever cola you have
1 Tablespoon of liquid smoke
Onion and pepper chopped – optional
1 Crock Pot – the crock pot liner you will see is optional but wow, is it convenient.
Wash and pat dry the pork, pat the dry rub all over, place in the crock pot and pour the pop and liquid smoke around the edge of the crock pot and drop in chopped onion and peppers in.

Dial the Crock up to high and let it go for about 5 hours and turn it over once.

Then shred it up with 2 forks like this.

Put the pork back in and mix with any leftover liquid in the crock. Let it heat for about 30 minutes then take it out and cover loosely with foil for a few minutes. Then make your sandwich with whatever fixin’s you prefer. This is how we eat ours!

Now, how easy was that? And, I’m telling you this Head Country stuff is great!! I get no money from them so I wasn’t paid to do it. Enjoy!!
