pudina paneer recipe - paneer cooked with mint and coriander leaves.another paneer recipe and this one is based on green chutney but the method is little bit different.You did not need any rich ingredients to go with this recipe.The color looks bright green and this is perfectly go with pulao and flat breads.
I saw this recipe in so many blogs but those are cooked with methi leaves or another spinach varieties.So i came up with my own version with spicier version.You need green chillies,ginger,mint leaves and coriander leaves.The coriander leaves balances the flavor of mint leaves in the recipe and also add some extra flavor to the recipe.You need the usual ingredients and spice powders that we use for north indian curries.
Having no time here in my hometown,following facebook and instagram for updates from friends.Enjoyed some kozhukattais and had some fun yesterday and my only sad feeling was no recipe for chaturti in my blog this year.Was busy in home shifting and also in traveling,so did not planned the recipes for both Janmashtami and Chaturti.Posting some recipes from draft till this weekend and will be regular in updating the blog from next week.
Before traveling,we bought pudina and coriander leaves in bulk and forgot about travelling.So that week was full of spicy treats and that week i made pudina pulao,pudina paneer,paneer biryani in a row.My goal was to finish off everything in refrigerator which has less capacity for storing.successfully i made everything and take some shots for blog too.will post one by one and here comes the recipe.,

Recipe made with mint and coriander leaves and paneer
Ingredients
- paneer,cubed - 1 cup
- pudina -1 fistful
- coriander leaves - as needed
- onion - 2 roughly chopped
- tomato - 2 roughly chopped
- capsicum - cubed , 1 no
- ginger - 1/4 inch piece
- garlic - 4 cloves
- green chilli - 3 nos
- turmeric powder- 1/4 teaspoon
- red chilli powder - 1/4 teaspoon
- coriander powder - 1/2 teaspoon
- kitchen king masala - 1/2 teaspoon
- garam masala - 1/4 teaspoon
- salt - to taste
- oil - as needed
- cinnamon,cardamom,bay leaf,cumin seeds - for tempering
- Heat 2 teaspoons of oil in a kadai and saute onions till soft and then saute tomatoes till mushy.Cool the mixture.
- make a fine paste with sauteed onion and tomato along with mint leaves,coriander leaves,green chilli,ginger and garlic.
- Heat oil in the same pan and add cinnamon stick,cardamom and 1 teaspoon of cumin seeds to it.
- Then add cubed capsicum and saute it till half done.Now add the paste and saute it till oil separates.
- now add red chili powder,coriander powder,turmeric powder,kitchen king masala,garam masala with required salt for the recipe.
- Saute it and add enough water for the gravy.Finally add paneer pieces and cook for 2 minutes.
- Add crushed kasuri methi and switch off the flame.
