After 2½ years in Dubai, I finally set foot in the fish market. It was quite an experience I must say. Bring out your bargaining skills and you will get yourself some pretty good deals here. Still, the fish markets remains a place I would not go alone.
I bought some pomfrets from the fish market and was thinking of how to cook them. I love steamed fish but I know my hubby prefers the fried version. So I marinated the pomfrets together and cooked both versions for dinner. Instead of pan frying, I used my Philips air-fryer and the fish turned out quite well.
Here’s the recipe for steamed and fried pomfrets. Enjoy!
STEAMED & FRIED POMFRETS
Ingredients:
- 500 gram pomfrets, cleaned
- 2 tomatoes, cut
Ingredients for marinade:
- Ginger, thinly sliced
- Green onions, cut
- 1 tablespoon huadiao wine 花雕酒
- ½ teaspoon sesame oil
- Black bean sauce, to taste
- Soy sauce, to taste
Method for air-fried pomfret:
- Leave pomfret in marinade for about an hour in the refrigerator.
- Pre-heat air-fryer to 180ºC.
- Lightly spray the air-fryer dish with cooking spray. Remove pomfret from marinade and place in air-fryer dish.
- Air-fry pomfrets for 12 minutes, turning once halfway. I will try going up to 200ºC the next time, to see if it makes the fish crispier.
Method for steamed pomfret:
- Leave pomfret in marinade for about an hour in the refrigerator.
- Add water in your steamer and bring to a rolling boil.
- Place pomfrets on a plate, pour in marinade and surround fish with tomato slices.
- Steam fish at high heat for 8 minutes.
