We all love cool, dripping popsicles on a hot day! These Popsicle combine tangy pomegranate juice with frozen pomegranate in every bite and they will literally pop in your mouth.

Climate in Mumbai has never been predictable. It rains in the mornings and late evenings, and its super-hot in the afternoon. After facing the sweltering heat, there could be nothing better than a fruit Popsicle to cool you off.

I am in love with how blushed and bejeweled these Pomegranate Popsicles are. Every time I take one out of its mold I smile. Even better than their looks though, is the way that they taste! I am not very good at fancying things, but you may put your own creativity, add more fruit juices and fruit pieces.

To ward off the cravings for ice cream, you may have these healthier ice pops. They may not be as satisfying as ice cream, but they are surely low on calories. And they are fruity. And tasty!

Frankly speaking, this recipe doesn’t require much of your efforts. Freeze the juice and they are done!!!!! You may add honey instead of sugar for a distinct flavor. They are incredibly simple and easy to make and each time your teeth burst open a frozen pomegranate seed, you are sure to smile like I did. :)

Ingredients

2 large pomegranates

½ cup water

3 tsp. sugar

1 tsp. lemon juice

Pinch of black-pepper and salt powder (optional)

Method

De-seed the pomegranates and add them to a mixture grinder (leave 1/4th of the seeds for later). Add the water, sugar and lemon juice. Grind everything until it becomes juicy.

Strain the juice and adjust the sugar and lemon juice as per your taste. Pour the juice in moulds and add some pomegranate seeds to each mold (the ones saved earlier). Place a stick in the center and refrigerate for at least 5 hours.

De-mould the popsicles sprinkle some black-pepper and salt powder and serve chilled.
