Things to remember/Tips:

  • These crisps can be served with any sauces/dips/chutneys
  • I made rectangles, you can do triangle or circles or any other shape
  • You can make and serve the cheese sauce with – salad, nachos, pasta, raw veggies, side dip, spread it on your pulao or biryani, fries or chips, or try my recipe for fennel crisps here
  • I would recommend cheddar cheese for the sauce, but Amul cheese also works fine
  • Please use whole milk for the sauce to add the creamy flavours

Ingredients

Baked Fennel (Saunf) Crisps

  • 1 cup all purpose flour
  • ½ tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. red chilli powder
  • 2 tsp. sesame seeds
  • 3 tsp fennel (saunf) seeds, coarsely grounded
  • ½ tsp. black pepper, coarsely grounded
  • 2 tbsp. Olive oil
  • ½ cup warm water + 2 tsp. of lemon juice
  • Olive oil for brushing

Easy Cheese Sauce

  • 2 tbsp. butter
  • 1 tbsp. flour
  • 1 cup milk
  • 1 cup cheddar or Amul processed cheese, shredded
  • 1 tsp. salt (or as per taste)
  • ½ tsp. red chili powder
  • 1 tsp. coriander leaves, chopped finely

Method

Baked Fennel (Saunf) Crisps

Mix flour, baking powder, salt, red chilli powder, sesame seeds, fennel seeds and black pepper in bowl with a whisk. Now add the oil and water (little at a time) and knead dough. Wrap with cling film and refrigerate for 15 to 20 minutes.

While the dough is resting, line baking tray with parchment paper (or with foil) and brush a little olive oil over it. Pre-heat the microwave to 230 degree Celsius. Cut the dough into 8 pieces and roll each out (1/10th cm thickness) in any shape of your choice with the help of little flour (I cut them into rectangles). Place the pieces carefully on the baking tray (no overlapping) and brush with olive oil lightly. Sprinkle little salt and red chilli powder and pop the tray in the microwave for 8 – 10 minutes or until they turn lightly gold. Remove and let it cool.

Easy Cheese Sauce

Melt butter in a pan over medium heat and add flour. Mix it for a continuously for a minute (at this point, you will nutty aroma. Turn up the heat to medium-high and add the milk. Whisk continuously. The milk will come to a boil in a few minutes and start to thicken. Turn the heat to low and add the rest of the ingredients.

Mix for half a minute and turn off. The cheddar will melt with the heat of the milk mixture. Cheese sauce is ready!
