Pimento Stuffed Cucumbers

Its official, the last of my cucumbers are gone.

I have some pimento cheese in the fridge and thought how great it would be to stuff the last of my cucumbers with pimento cheese.

Boy were these good!

I just couldn’t get over how simple and delicious these were.
