Making perfect crispy yet soft dosai at home is more of an art I would say.It can be easily mastered with some patience and perseverance.There were times when I could not make dosai even in non stick tava :P.But now I have improved a lot :) Once you get the hang of preparing the batter in correct proportion,maintaining the tava at right temperature and spreading the batter,you can really be creative with dosai.I have said before having idly/dosai batter in fridge can really help you in many ways.Rushed morning breakfasts,unexpected guests,midnight hunger pangs :). The other day I was all set to make masala dosai but suddenly thought of making something different and came up with this vegetable masala dosai with pav bhaji masala dosai.I have read before this pav bhaji masala dosai is a very famous street food in Mumbai.I did not follow any specific recipe I just wet ahead and prepared a dry curry with assorted vegetables using pav bhaji masala and tried to stuff it inside dosai.I think I should have made the masala a little more wet.I was not able to stuff it perfectly,but the taste was just fabulous,like two worlds meeting :). Pav bhaji and masala dosai are my absolute favorites and it was a sheer bliss to have both together in this dish in spite of the imperfections in the making :). Try it out!
Pav bhaji dosai recipe
Star ingredients:Pav bajai masala powder
Time:30 minutes
Yield 6 dosai
Ingredients:
1 1/2 cup idly batter
1 cup assorted vegetables(carrots,different colored bell peppers)
1/4 cup fresh peas
1 onion sliced thin
2 teaspoons pav bhaji masala
1 teaspoon cumin seeds
2 green chillies slit
Salt
Butter
Method:
1.Heat a kadai and add some butter.Temper cumin seeds,add slit green chillies and onions.Saute till golden.Add fresh peas and saute for few minutes
2.Add the vegetables,sugar,salt and pav bhaji masala.Add 1/4 cup water and cook till vegetables are done.Remove the masala to a bowl.
3.Now heat a thick cast iron tava.Add 1/4 cup water to 1 1/2 cup idly/dosa batter and mix well.
4.Take a ladle full of spread into a very thin dosai(crepe).After 30 seconds,keep 3 teaspoons of prepared masala inside the dosai.Add butter around the edges and cook till crispy from one side.
5.Fold and remove from tava.
6.Serve hot.
Notes:
1.Make the masala into thick bhaji consistency to make it more spreadable.
2.You can use oil instead of butter.
