Paneer paratha is my favorite one as I never tried this at home.When I saw the left over paneer in the refrigerator, I immediately took that and diced them into cubes.After that want to prepare some paneer based curry or gravy for the blog,I skipped that and start to crumble without any thought.Then I fixed the recipe and add the ingredients which increase more flavor.The idea of adding pickle came once I saw this trick from my friend’s blog and my experience with paneer paratha in flight.Yes,we ordered the morning breakfast in flight when we are traveling from Chennai to Pune.The flight departures 15 minutes late I think and the pilot also priorly informed that we will arrive Pune after 1 pm.what to do?SO my H already booked veg meals for morning breakfast.Thank God! he booked that.I expected some sandwich or samosa or any other light one from them.But they listed that they have corn spinach sandwich,paneer paratha,and chicken delicacy.Then finally we ordered paneer paratha which tastes little bit tangy and they filled paneer burji mix inbetween a very thick chapatti.But the chapatti cooked well but I did not like the filling.There are two rolls for each.I did not able to complete the single roll itself.:(
From that experience I decided to do that one much better than that.By experiencing the taste and assuming some ingredients in the filling, I decided to do that for the dinner.V(my H first letter) encouraged me and the outcome was so perfect and it tastes better than that(loads of difference).The filling there we had too pickle gravy as one of the ingredient.While we are eating the dinner,V appreciated me that he likes it.Am on a cloud nine that timeJ
Paneer Paratha(2 Persons)
Ingredients for making
For dough:Whole wheat flour – 1 cupGhee- 1 teaspoonWater – as needed for making smooth doughSalt – to tasteFor fillingPaneer or cottage cheese – 1 cup crumbledGren chillies – 2 finely choppedGaram masala – 1 /2 teaspoonCumin powder -1/2 teaspoonPickle gravy – 1 teaspoon (preferably mango)Salt – to tasteHow to make
· Take a mixing bowl and combine salt and flour together.Add ghee and make a crumble like texture.Add water and make a smooth dough.· Cover the dough for few minutes.
· In another bowl,take crumbled paneer(crumbled using a blender),green chillies,garam masala,cumin powder and pickle gravy with a pinch of salt.
· Make a smooth dough from it without adding water.
· Now make equal portions from the dough made from wheat flour.Then in a rolling surface,dust with flour and roll it like a small disc and place the paneer balls inside it and fold as shown below.
· Now seal tightly and place the sealed portion below and roll it again with desired thickness.Roll gently once place the filling otherwise it will oozes out.
· Heat the skillet and grease it with oil or ghee and place the rolled paratha.Cook on both sides evenly.
· Serve it with spicy pickle and cooling raita.
Cooking tips
- You can also ad little red chilli powder to it if you want more spicy paratha.
- Add onions which are finely chopped to the recipe.I skipped that because I want it onion free recipe.
- Use any other pickle gravy available.
