Paleo Chocolate "Oatmeal" (Paleo, GAPS, Breakfast, Gelatin)

Yes folks I have another version of paleo oatmeal for you today. My first two have been so popular that I decided to keep the trend going! Why mess with a good thing right?
This one is a little different in that I have added some protein in the form of grassfed gelatin and bacon. Yes you read that right. Bacon. Bacon and chocolate belong together if you ask me. Well bacon and anything really. I have been trying to incorporate more gelatin into my recipes because it has so many amazing health benefits. And as always I only recommend the Great Lakes brand of gelatin because it comes from grassfed cows.
I am sure you can tell by the photos that these were taken before I got my new camera. Yes this one has been sitting in the archives for a while. It simply got too hot for oatmeal. But since the cooler weather is back I decided it was time to bring this one out of hiding. And since it contains chocolate it's kind of like having dessert for breakfast. Nothing wrong with that once in a while now is there?
You know what I have decided? I have a slight obsession with recipes that contain chocolate and raspberries. This will be the 5th recipe on the blog with this theme. At least I am consistent right? Paleo Chocolate

Ingredients

2 ripe bananas2/3 cup fresh raspberries1/2 cup full fat coconut milk (I recommend this brand since it is organic and free from guar gum and BPA) 2 TBSP coconut butter (I use this one) 1 TBSP coconut oil (this is my favorite brand) 1 tsp organic vanilla extract (buy here) 3 TBSP organic cocoa powder1 TBSP Great Lakes grassfed gelatin (the red can) (buy herehere or here)
1/2 tsp ground cinnamon (I use this kind) pinch sea salt
1 1/2 cups finely shredded coconut (I recommend this brand) 3-4 pieces of already cooked nitrate and sugar free bacon, broken into pieces (buy here
Optional: 1-2 TBSP maple syrup or honey

Directions

1. Place a medium saucepan/ pot on the stove on low heat2. Add bananas, raspberries, coconut milk, coconut butter, coconut oil and vanilla extract and allow to simmer for a few minutes until the bananas start to break apart, stirring frequently 3. Stir in cocoa powder, cinnamon, gelatin and sea salt and simmer for another 4-5 minutes4. If adding maple syrup or honey add that here5. Add the shredded coconut and remove the pot from the heat6. Place the lid on the pot and let it sit for 10 minutes to allow the shredded coconut to soften7. Add the bacon pieces8. Serve and enjoy!
Yield: 2-3 servings depending on the serving size
