Pal Payasam

The much awaited Navarathri is finally here :)For the first day I made a very authentic and traditional payasam-Paal payasam (thin milk fudge) as offering.We generally prepare some sweets for the morning poojai and sundal for evening poojai and distribution.So today Paal payasam it was for the morning.I love paal payasam a lot,the clean flavor of milk along with some basmati rice and fried nuts are just perfect for any kind of festival.I followed my usual recipe and we loved it a lot.Try out n let me know :)
Pal payasam
Paal payasam(Thin milk fudge)
Star ingredients:Milk and basmati rice
Time:40 minutes
Serves:3
Ingredients:
2 cups(500 ml) milk
1/4 cup sugar
2 teaspoons basmati rice
2 teaspoons assorted chopped nuts
A pinch of saffron soaked in 1/4 cup milk
1/2 teaspoon cardamom powder
Method:
1.Heat a pan with little ghee.Fry the rice for 2-3 minutes and remove to a plate.To the same pan add 1/2 more teaspoon of ghee and fry the nuts and keep aside
Pal payasam2.Take milk in a heavy bottomed wide vessel and bring to a boil along with milk.Add the sauted rice and let th rice cook in milk for 20 minutes.Keep stirring to avoid burning of rice.Milk should reduce by 1/2 inch in quantity
Pal payasam3.Once the rice has completely cooked and mixed add the cardamom powder and saffron milk
Pal payasam4.Let it boil for 5 more minutes.Add the roasted nuts.stir once and remove from flame.

Pal payasamNotes:
1.Increase the quantity of rice if you want a thicker payasam
2.You can add 2 tablespoons condensed milk and reduce sugar to reduce cooking time
