Our Favorite Cookies

Here is a recipe for our favorite cookies, maybe they’re our favorite because their the only ones I know how to make. It’s a great recipe because there are no “fresh” ingredients and super healthy. Perfect for boat and for kids!

1 cup of pecans (toasted)

1 cup of old fashioned oats (blended into oat flour)

1/4 cup of rolled oats

1 tablespoon of ground flax seed

1/2 teaspoon of baking soda

1/2 teaspoon of cinnamon

1/4 cup of maple syrup

2 tablespoons of honey

1 tablespoon of coconut oil

1/3 cup of raisins

3 tablespoons of sunflower seeds

3 tablespoons of sliced almonds

Preheat over to 300F. Bake pecans for 10 minutes. Use a blender or food processor (I have a hand pulled  chopper, pull on it kind of like a lawnmower, it’s small and no power needed) to grind the oats into oat flour. Put the flour along with the other dry ingredients into a mixing bowl and stir (keep the nuts and seeds to add later). Now add all the wet ingredients and stir well.

Your pecans should be done in the oven. Put the oven temp up to 350F. Put the pecans in your food processor or blender (or lawnmower)  for a cycle or two, just enough to break them up. Add the pecans, raisins, sunflower seeds and sliced almonds to the mix, stir well.

Now make little 1 tablespoon balls out of your mix. Its better to have a small bowl of water nearby to wet your hands between balls to stop the ingredients from sticking to you.

Bake the cookies at 350F for 10-13 minutes. The cookies should be golden and crispy on the outside and soft and gooey on the inside. Make sure you allow them to cool before removing them from the tray

The great thing is that you can change out the nuts when need be. I love golden syrup (Australian) so when I get my hands on it I substitute out the maple syrup for it.
