I always wonder,how many forms this humble batter takes.Prepare a large batch of idly batter,allow to ferment,refrigerate and that's it,your breakfast/dinner is safe and gonna be a breeze till the batter lasts :).I recently read in a magazine that south Indian idly has been put in the list of world top 5 healthiest breakfasts.I know we don't need a committee or magazine to tell that,after all idly is a balanced dish with almost no oil and perfect way to start a day.Our very own idly batter not only produces soft healthy idlys but many more scrumptious tiffin items like paper dosai,masala dosai,kuzhi paniyaram,sambar idly,uthapam just to name a few.Today I am blogging about an ever favorite breakfast of mine,Onion uthapam,to which I have also added grated carrot to give more color n nutrition.We always loved to have this uthapam from a small restaurant which was open only from evening.The granpa (chef) used to make these uthapams to utter perfection.Uthapam is a thick soft spongy crepe which may or may not have any toppings.The topping are endless these days like cauliflower,cheese,paneer etc however podi,onion uthapams are classic versions.Let us see how to make this tasty tiffin with left over idly batter.
Onion carrot uthappam recipe
Star ingredients:Idly batter,onion,carrots
Time:20 minutes
Yield:6
Ingredients:
1 1/2 cups idly batter
1 large onion finely sliced
1 carrot peeled and grated
2 green chillies sliced into rounds
Handful of cilantro leaves
2 teaspoons idly podi
Salt
Oil
Method:
1.Mix onion,carrots,green chillies,cilantro and salt.Mix well and keep aside
2.Heat a thick cast iron tava on medium flame.Once hot add a small ladle full of batter and spread like a thick small pancake.(Bigger than poori,smaller than chapathi)
3.Drizzle some oil all over the crepe and towards the edges.Sprinkle some idly podi on the uthappam.
4.Next add the onion carrot mixture over the uthappam and press well.
5.Carefully flip the uthappam and cook from both the sides.
6.Serve hot with chutney,sambar
Notes:
1.Do not make the batter like dosa batter.The batter should be thick but smooth enough to spread.
2.If you are not very comfortable to flip the uthappam,cover and cook for two minutes after dding the toppinggs.
3.You can add finely chopped bell peppers,tomatoes etc.
