Everyone knows that growing your own foods items such as, fruits and vegetables has amazing reward for your kitchen. It is healthy to use fresh and natural vegetables in your daily menu. Fresh vegetables are the balanced diet which gives you all the beneficial nutrients with no fat and also helpful in maintaining healthy and balanced weight. You can use the fresh or frozen vegetables, both has equal nutritional values. You can store the vegetables at the coolest place. To preserve all the flavor, nutrients, and color, freezing is the best option to keep vegetables fresh. Freezing gives you the option to take advantages of the quality of vegetables. You can enjoy the quantity of any seasonal or unseasonal vegetables all year round.
·   Tips for freezing vegetables for a long time
Preparing the best quality frozen vegetables items requires following procedures depends on the composition, type, and texture of the product. Here, are some simple steps that will help you in the freezing of your vegetables.
o   Select the freshest young, newly picked, tender vegetables to be freeze, if possible. For this purpose corns, peas and some other starchy vegetables are best, if slightly immature.
o   Wash the vegetables well with fresh water before freezing. Wash them at least twice in cold water. Removes leaves and stems before processing. Be careful, and do not allow the vegetables to soak water. Too much water will lose their vitamins.
o   Cut or sort the vegetables into smaller units for the efficient packaging and easy to use. Smaller units are compatible to freeze or unfreeze. You can use it at any time without any trouble.
o   Use the air tight jar, boxes, quart or gallon zip locked packet or freezer bags depending on your meal plan to use or storage for a specific period of time.
o   Prepare the freezer bags with all the label instructions from prior to beginning. Note the contents, portion sizes, type of vegetable, freeing date, and use by date for healthy and nutrients results.
o   Store the freezer bags in a portion for your favorite meals and recipes.

There are many preparations and freezing techniques used for vegetables, each is designed to preserve the nutrition, best flavor, color and quality of the vegetables.
o   Raw form packing
Vegetables such as green peppers and onions that will be used as the basic seasoning for any recipe in cooking can be frozen as raw. Peeled, herbs, and chopped vegetables can be packed directly in the freezer bags, or keep frozen in ice cube trays.  Lemon juice can be freeze in an ice cube boxes and then packed in freezer boxes for future use.
o   Blanching
Blanching is the steaming and half boiling of vegetables before freezing. Most vegetables needs blanched before packed to freezing. Blanching will help to prevents enzyme action that can cause to spoilage your vegetables. You can use any blenching method to avoid spoilage including, steam blanch, water blanch, and microwave blanching whichever is good for your vegetable. Every method is effective to save vegetables for a long time.
