Navratri - Quinoa Warm Salad ,Wholesome and Healthy -Saatvik Aahar

Yes, Quinoa is part of Saatvik Aahar, not a grain so you can eat it during a fast.I did the quinoa porridge,but what satisfaction vegetables and salt can give you,comes from nowhere else. So something substantial,vegetable filled and salty was the order of the day.The parents are extremely fond of quinoa,so when www.olivetreetrading.com sent me these three packs of quinoa,I knew it had to go to daddy dear.Because no one relishes quinoa like he does.So, he had quinoa porridge for breakfast while we had this warm quinoa vegetable salad.Wholesome,healthy and yum.And with a breakfast like this even skipping lunch was not such a bad proposition.We added the vegetables in the fridge, you can add or subtract or change according to what is available in your pantry.

You need
1 cup quinoa -we used Red quinoa1/2 cup milk1tsp butter1 tsp olive oil1 cup finely diced vegetables-red and yellow bell peppers, carrotsInch piece diced gingerFresh coriander,basilSalt ,pepper to tasteLemon juice Few leaves lettuce
Measure out the quinoa in a pan. Add the milk,and 1 1/2 cups of water and set aside to soak.This doesn't need washing,as it is pre washed.
After and hour set on simmer for 15 minutes. If you intend pressure cooking it, 2whistles on high and slow for 5 minutes. Allow to cool.
In a skillet or non stick PAN, heat the oil and did the butter.Ginger first, fried until the flavor seeps into the oil and butter. Carrots next till they become tender. We don't want crispy veggies, also not mushy. Just done. So al dente.Chopped peppers till they are slightly wilted . Add the salt and pepper. Toss.
Now stir in the quinoa and the herbs.Mix well and toss a couple of times. Turn off the heat and squeeze the lemon juice.Check for salt and serve.
Serve on a bed of the torn lettuce or you can mix in...Enjoy the meal and stay healthy. Remember,it's Important to keep changing your sources of protein,and quinoa is an excellent source of protein.Light on the tummy, easily absorbed and digested.Saatvik in every way
