You need
1 cup quinoa -we used Red quinoa1/2 cup milk1tsp butter1 tsp olive oil1 cup finely diced vegetables-red and yellow bell peppers, carrotsInch piece diced gingerFresh coriander,basilSalt ,pepper to tasteLemon juice Few leaves lettuce
Measure out the quinoa in a pan. Add the milk,and 1 1/2 cups of water and set aside to soak.This doesn't need washing,as it is pre washed.




Serve on a bed of the torn lettuce or you can mix in...
