Kuttu ka Atta or Buck wheat flour is Saatvik Aahar. Not related to wheat in any way,this flour has extremely high nutritional values. As long as you don't deep fry and eat too much ,it's a healthy alternative to wheat flour.

If the Japanese can make noodles,why do we need to deep fry anything made of this flour?So I tried shallow frying Pakoras or Dumplings in just a few drops of oil each.Controlled using an appam maker and a controlled oil pourer.I used rice bran oil the first time, if you feel as though you shouldn't be using that during Navratri, feel free to use ghee.

The atta is a little coarse,but that is because of the seed coating. So that increases the fiber value. Just 4 tbsp not of kuttu atta made 14 pakoras and they were so filling that I couldn't eat my dinner.I used a combination of paneer or cottage cheese and Lauki or bottle gourd just to reduce the calories and added the yogurt to add flavour,as all the ingredients are fairly bland and flavourless.

You need 
4 tbsp kuttu ka atta or buckwheat flour 2 tbsp yogurt 50 gms cottage cheese paneer50 gms grated Lauki or bottle gourdCoriander,ginger,green chillies chopped fineUpwas wala namak or rock salt and pepper to taste1 tsp oil or ghee
If you have an appam pan,bale balle, if not use a flat nonstick pan for frying the pakoras.Remember no deep frying so you can eat without any guilt. And the idea is to eat healthy.And detox.Place all the ingredients in a bowl and mix to get a batter like consistency. Thicker than regular began pakoras batter.Place a few FEW drops of ghee or oil into the appam pan.Drop spoonfuls of pakora into the appam PAN,fry on sim till you can turn the appe or Kuttu ka Atta pakoras over.Fry for a further few minutes till both sides look dark brown and chocolate-y and emit a nutty aroma.
Navratri- Kuttu ka Atta -Paneer and Lauki Pakora -Low CalLike so. The Lauki is what takes time to cook.So when the Lauki looks done, remove and serve with a yogurt and mint based chutney .

So you can avoid deep fried poories and Pakoras. Make your food healthy and your fasts enjoyable. You don't want to depend on antacids,do you?
