Mocha Pudding #chocolateparty

002 (3)I love coffee and when Roxana from Roxanas Home Baking announced this months ingredients are coffee and chocolate,  I was ecstatic to say the least. I absolutely love this combination.  I wasn’t sure what to make, but I know the possibilities were endless.

I scoured the internet for ideas and decided I would make a mocha pudding. Who doesnt love pudding right?

My family loved it and I think the recipe is easy to make. I think the coffee brought out the taste of the chocolate in this pudding. I also think that nothing beats homemade pudding.  Surprisingly it is not that hard to make Pudding from scratch.

To put it more over the top I added some pudding to my cool whip and put a big fat dollop over the top. Monkey Girl loved that part, I think it was her favorite.

This is a make again recipe for sure.

Mocha Pudding

Ingredients:

1/4 cup white sugar

2 tablespoons cornstarch

1 tablespoon cooled espresso coffee

2 cups half and half

1 cup bitter-sweet chocolate chips

1 tablespoon unsalted butter

1 1/2 teaspoon vanilla extract

1/2 cup cool whip

Directions:

In a heavy sauce pan combine sugar, cornstarch, espresso and half and half. Whisk over medium heat until mixture begins to boil and thicken. This should take anywhere from 3-5 minutes. Remove from the heat and add chocolate chips, butter and vanilla. Whisk until smooth. Divide mixture into 6 servings and reserving 3 tablespoons of the mixture in a separate small bowl. Cover and chill the remaining pudding until cold about 2 hours.

Meanwhile, combine the cool whip and the remaining 3 tablespoons of pudding. Also cover and chill for about 2 hours. When ready to serve top each mocha chocolate pudding with a dollop of the cool whip.
