Miyuki, DoubleTree by Hilton, Pune - Delicious Japanese FoodMiyuki, the Japanese word for ‘royal seating’ is a fine dining restaurant serving traditional Japanese cuisine at DoubleTree by Hilton. To retain the authenticity of the cuisine, a lot of the ingredients as well as the crockery & cutlery have been sourced from Japan.
This seven seater restaurant provides a memorable meal as the live Teppanyaki grill is the major highlight where all the magic takes place.  You eat with your eyes first could not be more true than on a Japanese platter. Chef Amarjeet Kumarwhips up an interesting culinary interaction with his plating and knowledge of Japanese food.
Miyuki, DoubleTree by Hilton, Pune - Delicious Japanese FoodWe start with the Yaki Hasun- a Japanese appetizer platter. Japanese knives are said to be the sharpest in the world. Incidentally the material used in the making of the swords is the same one used for making the knives. The knife is never to be disrespected and must always be placed in a proper manner. Our cucumber wrap salad did complete justice to the legendary Japanese knifing skills. It is perfectly thin slices of cucumber stuffed with Chinese cabbage, carrots & accompanied with a cucumber dressing. The dish is a welcome relief on a hot summer afternoon. Next came the grilled salmon with lemon butter sauce- moist fish with a crispy skin. Korrokko was a soft cheesy mashed potato ball coated in panko breadcrumbs and deep fried. The crunchy outside completely contrasted with the goey inside making me smile in appreciation. Our next course was Kabura mushi turnips stuffed with chicken mince & steamed. The dish was delicately mild with no hint of the tartness usually associated with turnips. It came as a complete surprise when I got told that it takes a good 3 hours to prepare & as I saw the remaining turnip with its intricate carving, I applauded how much of an eye to detail is followed at Miyuki. The accompanying sauce was a careful mix of dashi, sake, usukuchi & ginger juice.Chicken Teriyaki was a visual delight as the chef deftly handled two spatulas to toss the chicken slivers. The sizzling hot plate added to the show. My personal favorite teriyaki comprised of crispy juicy chicken served on a bed of sautéed onions & shitake mushrooms. The mushrooms had a meaty texture as well.
Miyuki, DoubleTree by Hilton, Pune - Delicious Japanese FoodThe quite essential Sushi platter made its grand entrance & was well received with much ooh’s & aah’s.   Art on a plate is all I can say. Sushi is perhaps the most common Japanese dish but a well made and plated quality sushi is what separates the chefs from the cooks.  Asparagus Hosomaki, thin sushi roll wrapped in noori sheet stuffed with blanched asparagus was awesome while Okaki, a crispy sushi rice cake topped with spicy spinach & creamy tuna was sensational.
For dessert I ventured where I have never been before. Ice cream of course but tempura sesame ice cream! Now that was a new twist. It turned out to be a scoop of homemade sesame ice cream covered with a thin sponge sheet dipped in tempura batter and quick fried. It was amazing. The other dessert was Castella, a soft sponge cake which is a specialty of Nagasaki. The story goes that it was brought to Japan by the Portuguese merchants in the 16th century & is derived from the Portuguese word castile meaning bread. Hardly able to walk with the delicious Japanese cuisine nudging my stomach, as I left Miyuki, I couldn’t wait to be back again.
