Kichadi is a pongal kind of dish made with rice and lentils.It is a hearty comforting one pot meal perfect for busy days.A steaming hot bowl of kichadi is a pure bliss on a cold day :).Recently I made this kichadi along with addition of few vegetables and minimum spices.This was absolutely tasty and flavorful.This is winner toddler food too :).Here is the recipe with step by step pictures.
Mixed vegetable kichadi
Star ingredient-rice and lentils
Time-30 minutes
Serves-3
Ingredients:
1 cup rice
1/2 cup toor dal
1/2cup moong dal
1 onion chopped
1 carrot diced
1 potato cubed
1/2 green bell pepper chopped
3 green chilles
Small piece of ginger crushed
1 teaspoon cumin seeds
1 teaspoon mustard seeds
10-12 curry leaves
2 tea spoons ghee
1 tea spoon oil
Salt
Method:
1.In a large pressure pan,add one tea spoon oil and splutter cumin seeds.Add ginger,green chillies and saute well.Next add onions and saute till golden.
2.Add the vegetables and saute well.Add the rice and dals and mix well.Saute for 2 more minutes.Add 4 cups of water ,salt and close the pan.Cook up to 4 whistles.
3.Once the pressure is released,open the pan.Temper mustard and curry leaves in ghee and add to the kichadi.Mix well and serve hot.
Notes:
1.Add any vegetables of choice like beans peas etc
2.Adjust water according to preference.If you need it more mushy increase water,or decrease to make it less mushy.
3.You can eliminate ghee and temper with oil to make this dish vegan
4.You can add crushed black pepper corns along with cumin seeds for more spicy version.
