
Mixed vegetable rice recipe
Star ingredients Ghee and assorted vegetables
Time:15 minutes
Serves:3
Ingredients:
1 1/2 cups cooked rice(Grains separate)
1 cup finely chopped vegetables(potato,carrots,beans,peas,cauliflower etc)
1 onion finely sliced
2 teaspoons chilli powder
1 turmeric powder
1 teaspoon cumin seeds
1 teaspoon mustard seeds
Salt
2 teaspoons oil
4 teaspoons ghee
Method:
1.Pressure cook rice such that the grains remain separate.Cool thoroughly.
2.Heat oil in a kadai and season with mustard and cumin seeds.Add onion and saute till golden.
3.Add all the vegetables,salt chilli powder and turmeric powder.Add 1 more teaspoon oil and saute well.
4.Keep the flame low and saute well for 10 minutes.The vegetables should be cooked very well.5.Add the rice,ghee and mix gently.
6.Serve with raita.
Notes:1.You may add any vegetable of your choice to this dish.
2.Beans like butter beans,double beans can be added.
3.Use good quality home made ghee.
