This mixed vegetable rice is a variety rice preparation which can't get simpler any more.You may not even believe me if I say a rice preparation as simple as this would taste divine,but yes it is.See I have not even taken step wise pictures because I really thought should I blog about this here,as I see this to be ridiculously simple :)This is my mom's signature which we have carried in our lunch boxes N number of times,and every time we will not get to eat even a mouthful as it would be gone once we open the lunch box :). Just a very few ingredients from kitchen,normal rice and 15 minutes,this is all the recipe calls for and you would have created a rice worth for any occasion.The secret ingredient is...GHEE,yes ghee(clarified butter). It adds such a wonderful flavor to the dish.Just try out once to know what I mean :)
Mixed vegetable rice recipe
Star ingredients Ghee and assorted vegetables
Time:15 minutes
Serves:3
Ingredients:
1 1/2 cups cooked rice(Grains separate)
1 cup finely chopped vegetables(potato,carrots,beans,peas,cauliflower etc)
1 onion finely sliced
2 teaspoons chilli powder
1 turmeric powder
1 teaspoon cumin seeds
1 teaspoon mustard seeds
Salt
2 teaspoons oil
4 teaspoons ghee
Method:
1.Pressure cook rice such that the grains remain separate.Cool thoroughly.
2.Heat oil in a kadai and season with mustard and cumin seeds.Add onion and saute till golden.
3.Add all the vegetables,salt chilli powder and turmeric powder.Add 1 more teaspoon oil and saute well.
4.Keep the flame low and saute well for 10 minutes.The vegetables should be cooked very well.
5.Add the rice,ghee and mix gently.
6.Serve with raita.
Notes:
1.You may add any vegetable of your choice to this dish.
2.Beans like butter beans,double beans can be added.
3.Use good quality home made ghee.
