Kunuku is a classic of Tam-bram cusine. This is usually prepared with a day old sour adai batter.But in our home mom usually prepares fresh batter for this since this takes precedence over adai anytime:) Addition of these vegetables is also my mom's twist to otherwise plain dish.This makes a perfect snack with coffee or tea on winter evenings. This is served on its own without any side dish as a snack or else as a side dish to samabar rice
Ingredients
1 cup rice1/2 toor dal1/2 cup gram dal1 table spoon urad dal8 dried red chillies1/4 coconut pieces1/4 cup finely cut carrot1/4 cup finely cut capsicum1/4 cup finely cut sweet pumpkin10 curry leaves1-2 strands of cilantro2 teaspoons asafoetidaSalt to tasteOil for frying
Method:1.Soak rice and all the three dals together for 2 hours,grin coarsly adding.dried chilli,asafoetida and salt.2.Add the chopped vegetables,coconut pieces,curry leaves and cilantro to the batter and combine well.
3.Heat oil in a kadai till smoking point and pinch the batter into small balls and deep fry.Remove to a tissue paper and serve hot.
Time: 15 minutes
Serves: 6
Notes:
1.Coconut can also be added along with dals and ground.
2.Onions can be added along with vegetables.If adding onion avoid asafoetida.
3.Heat oil well upto smoking point before frying.This ensures a crispy dish as well as doesn't soak up oil.
4.Do not skip sweet pumpkin as it imparts a lovely flavor and slight sweet taste to this spicy dish.
