Mixed Vegetable Gravy

Today I am blogging about a very simple yogurt based tangy gravy,a perfect side dish for chapathis.The points that draw attraction to this gravy is that there is no grinding required,uses very less spices and all the flavors are from natural healthy ingredients and fresh vegetables.It can be prepared in less than 20 minutes including the time for cutting vegetables.You can even mix this gravy with left over rice to form a quick masala rice.Though it is very simple and less time consuming,it is no less in taste,appearance or richness.try it once to know what I mean :)

Mixed vegetable gravy recipe
Star ingredients:Assorted vegetables and yougurt
Time:20 minutes
Serves:3
Ingredients:
1 cup assorted vegetables(carrot,bell pepper,peas,sweet corn kernels)
1 1/4 cup thick curd(not sour)
1 onion sliced thin
1 tomato chopped fine
1 teaspoon coriander powder
1 teaspoon garam masala powder
1/2 teaspoon turmeric powder
2 green chillies slit
1 small piece of ginger crushed
Salt
Oil to temper
Method:
1.Wash peel and chop the carrots into fine pieces.Chop bell peppers into thin slices.
2.Whisk the curd until smooth.
3.Heat 2 teaspoons oil in a kadai and temper with cumin and green chillies.Add sliced onions and saute till golden
Mixed vegetable gravy4.Add the tomato and saute well till mushy.
5.Next add the cut vegetables,coriander,garam masala and turmeric powder.Saute well till the raw smell goes off.
Mixed vegetable gravy6.Add the whisked curd,1/2 cup water,salt and cook till the curd is absorbed and vegetables are cooked.
Mixed vegetable gravy7.Allow the gravy to thicken for 5 minutes,garnish with cilantro if needed and remove from flame.

Mixed vegetable gravyNotes:
1.You can add potato,beans etc to this gravy to make it more hearty.
2.Add cub es of paneer to make it a special dish.
3.Mix 1 teaspoon cornflour with 1/4 cup water to thicken the gravy if needed.
4.To make it vegan replace curd with coconut milk.
