Today is the Feast day of Saint Rose of Lima. I made these little rose cupcakes in honor of her feast day.
Saint Rose of Lima is the patron Saint of Latin America and the Philippines. Her nickname was Rose because she was such a beautiful baby. She suffered may sicknesses in her lifetime. She was also tempted by Satan on many occasions. That did not weaken her resolve. She knew in her heart, the end reward would be heavenly joys and comforting companionship.
She died August 24th 1617.
I made little rose cupcake in honor of her feast day.
Red Velvet Mini Cakelettes
Ingredients:
2 /12 cups all purpose flour
1 1/2 cups white sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cup vegetable oil
1 cup buttermilk
2 eggs
2 tablespoons red food coloring
1 teaspoon white vinegar
1 teaspoon vanilla extract
3 tablespoons confectioners sugar for dusting
Directions:
Preheat oven to 350.
In a medium bowl sift flour, sugar baking soda, salt and cocoa. Using your mixer beat together the oil, buttermilk, eggs, food coloring, vinegar and vanilla. Add the dry ingredients and mix until smooth and combined about 2 minutes.
Divide the batter evenly among the pan filling each cakelette about 2/3 full. Bake in the oven 20-25 minutes. Test the cakes with a toothpick for doneness. Remove from the oven and allow to cool 10 minutes before removing from pan.
To make roses even, using a serrated knife slice the bottom off to allow them to sit evenly and not to wobble around.
Sprinkle powdered sugar on the top of each cakelette and serve on a pretty platter.
