I joined egg less baking group owned by Gayathri last month.I was really hooked with the idea of converting the recipes that use eggs into egg less ones.So I joined and now I am here with the first challenge.Gayathri chose these meat pies from Saveur and we were supposed to convert it into a egg less recipe.The recipe basically consists of egg in the pastry dough and meat in the filling.I used a simple vegetable cheese mixture for the filling and just left out the eggs in the dough.The pies turned out pretty decent considering this being my first attempt in making these.I used my muffin tin as I don't have pie dish or tart moulds.Here is my recipe with pictures.I reduced the quantity of original recipe.
Vegetarian version of meat pies-Baking egg less challenge
Star ingredient-Flour and vegetables
Time:10+25 minutes
Yield-8
Ingredients:
For pastry:
1 cup all purpose flour
50 grams unsalted butter chilled
1/2 teaspoon salt
1 teaspoon baking powder
A pinch of oregano,basil dried
4 tablespoons water
For the filling
1 carrot chopped fine
1 green bell pepper chopped fine
2 baby corns chopped fine
1 onion chopped fine
1 tomato chopped fine
2 green chillies
Salt
Grated cheese for topping
Method:
For filling:
1.In a kadai heat little oil,add green chillies and saute for a minute.Next add onions and saute till golden.
2.Add tomatoes and saute for 2 minutes till they leave out water.Now add the vegetables and salt and cook well.Let them be little mushy,so that they will be held together in pies.
3.Remove from the heat and cool to room temperature.
For pastry:
1.In a large mixing bowl sift all purpose flour with salt and baking powder.Add dried herbs and mix well.
2.Add the cubed butter and mix gently.Now rub the butter cubes with finger tios and make a crumbled mixture.Now gently add water and bring together to form a dough.Knead to a very soft dough for 5-7 minutes.
3.Divide the dough into two portions,one little bigger than the other.
Making of pies:
1.Take the bigger portion of the dough,roll into a big circle and cut 8 rounds slightly bigger than your muffin tin size.
2.Using the small portion again roll into a big circle and cut 8 rounds of your muffin tin size.
3,Place the bigger round in the muffin base,place filling and top with grated cheese.Cover with small round.Repeat the same with the other 7 portions
4.Bake for 25 minutes at 190C in a preheated oven.The pies should be golden on top when done.Un ould gently and serve warm.
We really enjoyed this delicious pie.Flaky crust with Spicy filling,Thank you Gayathri for a wonderful challenge :)
