Meatball Casserole

I’m going to show you how easily you can put together a family meal while juggling dance and football practice as well as homework and Tae Kwon Do lessons – all you need are some convenience foods and this hearty meal can be yours!

How is everyone doing?  I haven’t posted in a while – many things have changed including my heart getting slightly worse and my daughter and I selling Yum Goggle.  While I loved working on the website – I didn’t get to make new or practice old recipes much anymore and I really missed that!

This is an oldie but goodie that my daughter made up once when she was studying for an exam and starving at the same time with no time to go to the store.  We’ve been making it ever since!

1 bag of frozen meatballs (or 2 dozen homemade ones)

16 oz. fresh slice Mozzarella

1 Cup Simple Simon’s Alpine Dressing (or bottles Italian Zesty Dressing)

1 Jar of your favorite Spaghetti Sauce

½ a Loaf of French Bread, sliced buttered and browned in the oven.

4 oz can sliced mushroom, optional

Directions:

Pre-heat oven to 350F

Spray 13 x 9 pan with non-stick spray

Lay the bottom of the dish with the bread like this:

Mix spaghetti sauce with the meatballs that can still be frozen.

Pour Alpine Sauce or Dressing over tops of garlic bread.

Place half the Mozzarella on top of dressing spread bread.  Add Mushrooms now too if using.

Pour meatballs and spaghetti sauce over top of cheese like this:

Put the rest of the cheese on top like this:

Bake for 45 minutes covered with foil and then 15 minutes without.

Allow to stand for 10 minutes or so and then serve with salad and a roll.
