Mashed Potatoes with Herbs

Mashed potatoes with herbs

Ingredients
For 4 people

1 kg potatoes
50 g of soft butter
25 cl of semi-skimmed milk
2 onions
2 tablespoons olive oil
½ Bunch of coriander
salt, pepper

Preparation
for Mashed potatoes with fresh herbs

1. Peel the potatoes and cut them into large cubes. Place the pieces of potatoes in a pan of salted water, mount it to a boil.
2. Let cook for about 20 min at a simmer.
3. Wash and snip the fresh coriander. Peel and finely chop the onions.
4. Heat the olive oil in a frying pan and enter the sliced onions for 3 to 4 minutes over medium heat.
5. Heat the milk in a saucepan. Add the butter so that it melts. Book out of the fire.
6. Drain the potatoes, crush the press, or puree in the food mill. Avoid the mixer that would make the puree elastic.
7. Stir in the milk, the sliced onions and the chopped coriander to the mashed potatoes. Add salt and pepper to your taste. Serve mashed potatoes with fresh herbs while it is hot.
