Matcha latte is definitely one of my most favorite drinks. It perfectly combines my love for tea with my strong passion for drinking natural homemade nut milk. High quality matcha has a palate pleasing milky taste, so it makes a great combination when added to milk of any type(though I use and prefer vegetable or vegan milk instead). It’s been about 7 months that I discovered the delight of matcha latte and since then, it’s almost an addiction for me: I need to sip at least one per week.

I learned a few weeks ago that I am no longer allowed to drink soy milk or eat soy (for health related reasons and I also read a lot of information that soy based products are mot really good for health either) and it used to be my favorite at the coffee shop . Until then the only alternative to cow milk for me was soy milk. So to continue to drink my matcha latte, had to start to make it myself, at home.

You may ask now, why don’t I just start drinking cow’s milk?

Well, for 2 reasons: first, it is purely physiological: I don’t digest properly most of the lactose in cow milk as I’m lactose intolerant. I’ll spare you the details, but let’s say that if I drink a glass of cow’s milk I can’t do anything thru the entire day at all. The second reason is ideological: to produce more milk from the cow the calf is removed from its mother a few hours after its birth and is often not returned back to the mother cow at all. And she never sees her calf again. Nice, huh?

Then the mother cow continues to produce milk and farmers use this natural process to increase production and so the milk can be bottled as soon as possible. Honestly, it really bothers me, even though I understand the cow’s milk is a needed and valuable product, especially in the current economic situation. But still for now, I don’t really want to contribute to all this…

All that said , you can’t find any animal or cow’s milk in my fridge, but you can see vegan milk and mostly almond milk(often made at home by me).

So, to make my matcha latte, I use almond milk. It has a little natural sweetness, it’s delicious and is really delicious. The matcha green tea that we will use in today’s recipe, it can be found on the internet as there are currently many good shopping sites that sell a variety of matcha grades and price ranges. If the internet isn’t for you, you can find matcha green tea at your local organic store or tea shop.

What is Matcha anyway?

Matcha green tea, is actually a very fine powdered form of the green tea plant(Cammelia Sinensis). It is a tea which is more expensive than normal tea and is not consumed the same way: rather, its an element of preparation as a tea to infuse. And one of the recipes most well known, it is the one of the matcha latte, we are talking about today!

Ingredients for 1 cup

1 cup of vegan(almond) milk or cow’s milk
1 teaspoon of matcha green tea
1 spoon of agave syrup or honey if you want it sweet

Directions

1. In a small saucepan, heat the equivalent of one cup of milk until it thickens and boils. 2. Pour a little milk into your cup, add your matcha tea and whisk until the mixture is nicely blended and slightly foamy. 3. Add the rest of the milk and if needed, filter the drink through a tea strainer or filter as the matcha green tea can sometimes make lumps if it’s not sieved. 4. Add a little bit of agave syrup and there you have it. Now the only thing to do is fully enjoy your delicious and healthy drink!
