Masala Toast Sandwich

The local bakeries here in Chennai and Bangalore have few things common and absolutely delicious.Spicy buns,dil pasandh (coconut-tutti fruity bun),simple bread cake and this masala toast sandwich are a few to name.Those who have tasted this will surely know what I mean :)A very spicy onion-tomato mixture over stuffed in between two small bread slices and toasted slightly.This is completely different from chaat style sandwich and this sans any chutney.I would say if prepared with fresh ingredients in hygienic condition this is definitely a healthy food for kids and adults.In my version I also sneaked some carrots in filling and used whole wheat bread.

Masala toast sandwich:
Star ingredient:Onion tomato masala
Time:20 minutes
yield:6 
Ingredients:
12 whole wheat bread slices
1 carrot
2 tomatoes
1 onion
2 green chiliies
1 piece ginger
2 teaspoons melted butter
Salt
Cilantro
Method:
1.Wash,peel and grate carrots.Chop tomato and onion.Crush ginger and green chilli together.
2.In a skillet add little oil and saute ginger-green chilli for 2 minutes.Follow by onion,tomatoes and saute for 2 more minutes.

3.Add carrots and cook for 2 more minutes,add salt and garnish with cilantro.

4.Heat a tawa with little molten butter.While its heating,take a bread slice,place 2 teaspoons of the prepared filling and close with another slice.Toast from both sides.

5.Repeat with the remaining bread slices.Serve hot.

Notes:
1.To get the exact tangy taste of those bakery sandwich try omitting carrots.
2.Generally  edges of the bread is not trimmed for these.
3.You can replace the molten butter with oil if preffred
